Ingredients

2 medium Irish potatoes or 1/2 lb (Peeled and sliced with crinkle cutter)

1 Teaspoon Salt

1 Teaspoon Paprika

2 Teaspoons Oregano (dried flakes)

1 cup vegetable oil

Instructions

Peel and wash potatoes and place them on a cutting board.

Using crinkle cutter, cut each slice into 1/8 inch thick slices. Or just as thin as you want them. No fuss in trying to get them to all look the same. That can be a bit of a challenge, but no one really notices when it’a time to eat! Ha! How about that!

Toss the powdered ingredients on the potato fries and mix them together to get them to have even distribution of the spices.

Heat a small frying pan on the stove with the oil for two minutes and then lower the flames under it to medium heat.

Fry the potatoes until golden brown. Watch constantly and turn to get the desired result. The amount of time it takes for them to fry depends on the thickness of each and the level of heat under them.

Serve hot! and do enjoy. I server with both ketchup and thousand island dressing. Oh so delish!!!
