Begin by placing the cashew on a baking sheet in a single layer, toast in the oven for 5 minutes.

Meanwhile, prepare the marinade by combining the cornstarch, soy sauce, black pepper, sesame oil, and rice vinegar, toss in the pieces of chicken until coated. Cover the bowl and put it in the refrigerator to marinate for 30 minutes or up to 4 hours. Meanwhile, prepare the vegetables, set them aside.

Prepare the sauce in a small bowl and set aside.

Next, in a large nonstick skillet, stir fry the marinated chicken over medium-high heat; stir to prevent sticking for about 10 minutes or lightly brown but cooked. Transfer to a plate.

Thirdly, sauté the vegetables for 3-4 minutes or until they are crisp and tender over medium heat.

Finally, combine the chicken and vegetables in the skillet and add the honey sauce mixture. Cook for an additional 3 – 4 minutes. Remove from the heat and stir in cashews, green onion, sesame seeds, and serve over Jasmine rice.

Ingredients

  • Marinade
  • 3 boneless chicken breast
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • ½ tsp fresh ground black pepper
  • 1 tsp rice vinegar
  • Ingredients for the sauce
  • 1 ½ tbsp rice vinegar
  • 1 tbsp cornstarch
  • 3 tbsp soy sauce
  • ¼ cup refined honey
  • ½ cup water
  • 1 ½ tbsp sriracha sauce
  • Ingredients for the stir fry
  • 2 cups broccoli florets
  • 2 tbsp vegetable oil
  • 1 red bell pepper
  • 1 large sweet onion
  • ¼ tsp crushed red pepper flakes
  • 3 medium cloves garlic
  • 1 cup unsalted cashew nuts toasted
  • Serving
  • ¼ cup sliced green onion for garnish
  • Hot cooked jasmine rice
  • 1 tbsp toasted sesame seeds for garnish

Instructions

  1. Prepare marinade by combining cornstarch, soy sauce, black pepper, sesame oil, and rice vinegar in a large bowl. Add the pieces of chicken to the bowl and toss to coat. Place the covered bowl in the refrigerator to marinate chicken for 30 minutes or up to 4 hours. Meanwhile, prepare the vegetables.
  2. Whisk the ingredient for the sauce in a small bowl. Set aside.
  3. Remove the marinated chicken from the marinade and pat dry with a paper towel. Heat the oil in a skillet or large wok over medium-high heat. Add the pieces of chicken and sauté, stirring frequently until lightly brown and cooked through, approximately 10 minutes. Put on a plate and set aside.
  4. Add the remaining oil to the skillet and heat until shimmering. Add all the vegetables and sauté until they are crisp-tender, approximately 3 – 4 minutes. Add the minced garlic and red pepper flakes and stir for about 1 minute. Reduce the heat to medium-low.
  5. Return the chicken to the pan and then add the honey sauce mixture. Cook, stirring constantly until the sauce thickened and all the vegetables and chicken are fully coated, for about 3 – 4 minutes. Turn off the heat and add the cashews to the pan. Stir gently to coat. Serve hot over cooked rice and garnish with toasted sesame seeds and sliced green onions.
