Ingredients

  • Streusel Ingredients
  • 1/2 cup all-purpose flour
  • 3 tbsp butter
  • 1/3 cup sugar
  • Cheesecake ingredients
  • 1/2 lb cream cheese
  • 1 egg white
  • 1/4 cup granulated sugar
  • 1tsp pure vanilla gel
  • 1 1/4 cup blueberries
  • Cake ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup granulated sugar
  • 3/4 cup sour cream
  • 1 tbsp pure vanilla gel
  • 1/4 tsp sea salt
  • 5 1/2 tbsp unsalted butter
  • 1 large egg
  • 1 egg yolk

Instructions

  1. Mix the cream cheese, vanilla, and granulated sugar in a standing or hand-held mixing bowl until smooth. Gradually add the egg white and set it aside.
  2. In another mixing bowl combine the flour, baking powder, baking soda, and salt.
  3. With a paddle attachment on the mixer, cream the butter and granulated sugar until fluffy and creamy. Gradually add the eggs and the pure vanilla gel.
  4. Add the flour mixture in two parts. Add the sour cream in two parts too after adding the flour mixture.
  5. Preheat the oven to 350 degrees F. Prepare a lightly greased 9 inches springform pan with wax or parchment paper.
  6. In another mixing bowl, combine the ingredients for the streusel topping. Cut the butter into chunks while still cold. blend all the ingredients. The mixture should be crumbly.
  7. In the prepared pan add the cake batter and smooth the top. Add 1/3 cup of the blueberries on the top then add the cream cheese filling.
  8. Sprinkle the remaining blueberries on the top of the cheesecake layer. Then add the streusel on top of the blueberries.
  9. Bake in the preheated oven for 40-48 minutes until a skewer comes out clean.
  10. Cool on a wire rack before opening the springform latch.
  11. Keep refrigerated when baked.

Notes

To make the streusel topping, the butter should be chilled. Cut into cubes as this will ensure the mixture comes out crumbly.
