Soft chewy and fruity cherry kiss cookies with tasty Hersheys kisses on top.
Ingredients
- 36 Hershey chocolate kisses
- 10 oz cocktail cherries
- 2 tsp of the cocktail cherry juice
- 1/8 tsp red food coloring
- 2 tbsp granulated sugar
- 1 cup icing sugar
- 1/4 tsp almond extract
- 1/4 tsp salt
- 2 stick butter at room temperature
- 2 1/4 cup flour
Instructions
- Put the 2 tbsp granulated sugar on a wide flat plate and set aside.
- Add the butter in an electric mixer with a paddle attachment and beat the butter until it doubles in size and smooth.
- Gradually add the icing sugar a table spoon at a time along with the salt.
- Take the cherris from the bottle and chop them fine. Reserve the juice.
- Add the 2tbsp of cherry juice, the almond extract and the red food colouring.
- Slowly add the flour until evenly incorporated.
- Remove the bowl from the mixer and fold in the chopped cherries with a spatula..
- Turn on the oven and preheat to 350 degrees F and line a baking tray with parchment paper.
- Scoop the mixture into 1 inch balls and coat them in the sugar you had reserved at the start.
- Place them on the prepared baking tray and press the middle of the cookies to flatten them a bit.
