  • 1 cup pumpkin (Roasted and pureed)
  • 2tsp pumpkin spice
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/3 cup water
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1tbsp vanilla
  • pinch of salt
  • 1 tsp baking soda
  • 1 3/4 cup all-purpose flour


  1. Whisk sugar, baking soda, flour, salt, and pumpkin spice in a large mixing bowl.
  2. Fold in roasted pumpkin puree, eggs, oil, water, and vanilla.
  3. Pour batter in a 9*5 loaf tin that is greased and lined with parchment paper.
  4. Bake for an hour at 350 degrees F, until a toothpick that has been inserted comes out clean.
